Having been transfixed by the distinctive features of the region's wines, the Belgian native decided to lease a few vineyards on Etna's volcanic slopes, and eventually purchased his first plot there in 2001. Cornelissen has since become a hugely influential winemaker in the region, working to a strict minimal intervention philosophy in both the vineyard and winery. Both red and white wines are made with traditional Sicilian varieties which undergo lengthy macerations on skins, before being bottled without filtration or sulphur additions A fifty/fifty blend of Carricante and Grecanico Dorato, an absolute standout (as is to be expected)! Complex and elegant, this has notes of ginger, ripe yellow fruit, and a lovely herbal character.

The Muscat grown for this cuvee is made up of two varieties (Muscat a Petit Grains and Muscat d'Alexandrie) grown by Vincent Lafage from Saint-Jean Lasseille in Roussillon. Each variety is vinified separately (with approximately 15 days on skins), textural and aromatic, this is an absolute delight.

Picked early to keep the bright acid, this is so fresh and so clean, with lemon and some salty minerality. The wine spent nine months on lees, in old oak, resulting in a super moreish pillowy texture. (750ml) 12.5% ABV

Fresh fruited and floral, it's loaded with bramble berries, plum and a hint of saline. If you like Gamay, you'll love this!

Somos Mencía 2021

A blend of Tasmanian fruit sits composed and compact on a bright rail of acidity—redcurrant, wild raspberry and cassis, with oak very much in the background. Wild fermented, with a fraction whole bunch, and matured in French oak—it’s just lovely!

Pooley Estate Pinot Noir 2021

Aromas of white peach fuzz and nectarine, with an oak-derived spice lift. A lovely ripe stone fruit palate, met with a with a freshening acidity and some more subtle salty notes. (750ml) 13.0% ABV

Energetic and refreshing, with a savoury rose hip nose, citrus peels and fruits—it's a bit weightier for rosato but a bright acidity keeps it feeling fresh. Drink this with your fun friends!

Cinsault and Grenache were pressed and fermented separately in concrete and blended before bottling. Refreshing strawberry, a lick of tannin, some granitic energy and cool mineral acidity.

Martin Texier Le Preyna 2020

Pouring deep and dark in the glass, this is all plum and berried fruits on the nose. Grape juice and a touch of dusty tannins meet on the palate before giving way to hints of tamari, bringing some complexity to the wine.
