This beer is a collaboration between NSW legends, Mountain Culture and Wildflower.
Made from Australia-grown and certified organic malted barley, raw wheat and aged hops. There is a heavy influence of Belgian Lambic beers when it came to making this, made in the same way, however different geography means it is not named as this.
Lovely aromas of tropical fruits, hop and oak, backed up by a texture laded and hop bitterness palate. We’d say buy two, one to drink now and one for the cellar if you have the patience to see what is unveiled.

Pioneers and low-key geniuses of mixed fermentation, Topher Boehm and the team at Wildflower are leading the way in the world of wild beer. They focus on fermenting beers with a mixed house culture of brewer’s yeast mixed with wild yeast and bacteria foraged from New South Wale by Topher himself.
Their commitment to wild fermentation means their beer making process is often altered depending on the yeast, and the way its expressed so each release is always one of great intrigue and contemplation.
They continue to stupefy us with delicious releases.
