Named after the magnesium limestone rich soils of the area, the Les Dolomies domain was created by Céline Gormally back in 2008.
Using biodynamic principles, manual farming with livestock, fermentation with indigenous yeasts, and very little sulphur (if any) - the Les Dolomies cuvées are wonderful expressions of each parcel. Coming from 70-year-old Chardonnay vines just below the town of Passenans, Les Combes is slightly rounder in look and feel than the other cuvées in the Les Dolomies line up, though it's still underpinned by an electric line of acidity that is synonymous with this Domaine. Baked apples and rich lemon, chalky minerals and a hint of pine resin with a lovely long finish.
