Sam and Al's first foray into the world of non-alcoholic wine is a juicy and bright chilled red, with all the deliciousness of Konpira Maru's usual lineup (minus the alcohol!)
This Dolcetto was made with fruit sourced from northeast Victoria which underwent a revolutionary new alcohol removal process called pervaporation. It was fermented exactly like a normal wine, but then gently decoupled from its alcohol content in order to retain all of the complex flavours and aromas. Expect juicy notes of red plum and strawberry gum aromatics, with a fresh line of acidity and hint of chalky tannin. Pepper spice and plum tinctures are also added to give fruit and spice vitality that can go astray in non-alcoholic wines—there's little fear of being left wanting!
