From the north side of Etna, this Bianco is fermented entirely in steel to really let the precious volcanic earth come through with as little manipulation as possible. It's salty with a little honey blossom and some peach fuzz on the nose, while the palate is more savoury. There's also a textural quality as there is with most things Sicilian in our experience. Bellissima.
