Mechthild is known by Eduard and Stephanie as the "mother of the Gut Oggau vineyard". It is made from 100% Grüner Veltliner, coming from 60-year-old vines (the oldest among Gut Oggau's holdings) planted on lime and slate soils. It is fermented on skins before being pressed in a 200-year-old wooden press. It is matured for two years in neutral oak barrels on full lees and then bottled unfined and unfiltered with no sulphur additions.
