Light and delicate. There’s a lot of subtlety and nuance here and everything runs pure thanks to most fruits being destemmed and only a week on skins. It’s chilled red with an undertone of earthiness that’s alive with strawberry and pomegranate.

Siren Wine The Empress Pinot Noir 2023

Colour and fruit in abundance for plenty of depth and a lot of super bright squishy berries that are kept savoury with just a pinch of aniseed-like spice. Serve it cool, not cold for the best of times.

A Sauvy B and Chardy blend that sees a short fermentation period and comes through with plenty of texture. The wine to bring when you don’t know the menu, or the vibe because it’s a little cuisine chameleon and great time unto itself.

A clean and plush expression with sweet whole berries and a flitting carbonic note. Very juicy and very pure, but it’s more than that thanks to a little mineral element and splash of dusty tannin.

Konpira Maru Pan Opticon Riesling 2024

Fermented half whole bunch for full deliciousness. Love the elevated and floral notes. If you call it Gum, we're going to need it to have a long finish and this delivers with raspberry leaf, olives and a sprinkle of pepper.

GUM Syrah 2024

Fleshy strawberries and cherries with some dusky, chalky depth. Fruit was held in concrete and there was no fining or filtering, this is perfect for a LoFi devotee or a red-lover who’s a bit adventurous.

Antonio Camillo Mediterraneo Rosso 2023

Texture and a subtle orange glow thanks to just a moment on skins and a partial ferment in amphora. Crack it open when you want flavours that hit clean and luscious; like lemon curd, rockmelon and honeysuckle.

Cabernet Franc with a splash of early-picked Chenin Blanc. It’s nice when worlds collide for flavour-filled perfection that’s full of boysenberry and mulberry. This will do perfectly with bites of carne asada and appreciated, humorous points.
