Mitchell Harris Sabre Rose Sparkling Rose Pinot

Hand-harvested fruit that was entirely de-stemmed and partially foot-crushed before a three-week open fermentation. Pours a lovely, practically opaque garnet and serves up heaps of cassis and new leather in the glass before balancing elements of fig and blood. Really beautiful wine that deserves a decant and will age with grace.

Joshua Cooper Redbank 1970s Cabernet Sauvignon 2022

This keeps its cards close to its chest, but with some time in the glass shows a palate of dark berries and cherry fruit, with fine layered tannins, bright cherry acidity and some graphite complexity. The second to ripen of the three Cabernet Sauvignon sites, the fruit was harvested by hand, partially foot crushed and open fermented for three weeks, before elevage in a mix of new Stockinger and seasoned Bordeaux barriques for 12 months. Allow this to unwind in a decanter and it will show its layers of complexity, or if you can bear to wait, cellaring will reveal more nuance and complexity with time

Yet another beautiful cuvée from Dilworth & Allain that's laden with pretty spice, rose petals, flowers, and red apple. Grenache was sourced from the north-facing slope of Mt Cole and is showing off that glorious cool climate freshness. This would love to accompany your next Middle Eastern feast!

Cabernet Sauvignon from the Shay's Flat parcel of the Chapoutier vineyard was picked ripe for a more gastronomic expression of rosé that embraces both texture and flavour. In the glass, it's loaded with varietal structure and tobacco-like spice, with some gentle oxidative handling bringing some lovely savouriness to the palate. Sip, savour, repeat.
